So I have decided to get back on track with this blog, and dish out some great new recipes! This one is from Healthymealsinminutes, which I tried last night and loved it so much I HAD to have it for lunch today. Due to my stomach issues, I did have to make a few adjustments, but nothing really noticeable. Enjoy!
Ingredients:
- 2 slices of bread (any kind works)
- 1 Tbsp of pesto (use your favorite kind; I used Pastene)
- 2 slices of rice cheddar cheese (I actually used the brick and cut 4 slices so that it equals up to the size of the bread.
- a handful of fresh baby spinach
- 1/4 avocado, sliced
- 1 table spoon of goat cheese OR light feta outside of the brine, crumbled **
- cooking spray
**For my tummy issues, I have recently discovered that if it is fat free or small portions of light dairy products, I don't have issues with it.
Directions:
Spread each slice of bread with pesto. Start topping one slice as follows: 1 slice of cheese (or two if you cut it from a brick of cheese), the avocado slices, the goat cheese or feta, spinach, second slice of cheese, and then top it off with the other slice of bread. Press together.
Spray a fry pan and heat on medium heat. Put the sandwhich in and grill til each side is lightly browned. Removed from heat, cut and enjoy!
